Order It With the Suit, Not After It
Cloth is woven in rolls, and two rolls of the same cloth are never quite the same colour. Indoors nobody notices. In daylight at an outdoor wedding, a waistcoat from a later roll reads as slightly wrong against the jacket without anybody being able to say why. If there is a chance you will want the third piece, order it with the suit and the question never arises.
The back matters more than people expect. A satin back is traditional and cooler, and it is also the reason some waistcoats cannot be worn without a jacket. If you intend to take the jacket off at the reception, and in a Florida summer you will, ask for a full cloth back.

Can I add one to a suit I already own?
Only honestly if we can still get the cloth. Bring the jacket and we will tell you either way rather than guess.
Can I wear it without the jacket?
That is what a contrast waistcoat is for, and at an outdoor Florida wedding it is the most comfortable way to stay dressed.
How should it fit?
Covering the waistband with no shirt showing below the last button, and lying flat with no pull across the buttons.
